Baked Whole Rainbow Trout

Ingredients

  • One whole rainbow trout, dressed (about 0.4 Kg)
  • Organic No-Salt seasoning
  • Lime Juice
  • Capers to garnish

Directions

  1. Preheat oven to 425 degrees
  2. Rinse fish in cold water under faucet
  3. Shake off excess water
  4. Place on about 1.5 feet of parchment paper
  5. Sprinkle with lime juice liberally on skin and inside fish
  6. Sprinkle No-Salt Seasoning liberally on skin and inside fish
  7. Fold parchment paper under and around the fish to seal - tuck ends under
  8. Bake for about 15 minutes or until flesh is tender and flakes easily
  9. Let sit on counter for 15 minutes, then carefully peel skin and bones from the fish. (A kitchen knife works well for this - cut head off, then slide lengthwise under the skin gently).
  10. Place the 'meat' of the fish on a platter and garnish with capers.
  11. Enjoy!

Special Notes

  • Fish is healthy! Baked in this manner it does not taste overly 'fishy'.
